Two Tasty Gluten-Free Recipes That the Whole Family Will Love Posted: 22 Mar 2011 02:57 PM PDT It can be a challenge coming up with fantastic recipes that aren't just gluten-free but also delicious. Well, we've made the search a little easier for you. Check out the following gluten-free recipes that we've dug up for breakfast and lunch. Gluten-Free Pancakes For this recipe, you'll need the following ingredients: • 2 eggs • 2 cups water• 1 cup rice flour • 1/3 cup potato starch • 4 tablespoons dry buttermilk powder • 3 tablespoons tapioca flour • 3 tablespoons canola oil • 1 1/2 teaspoons baking powder • ½ teaspoon backing soda • ½ teaspoon salt • ½ teaspoon xanthan gum • 1 packet sugar substitute Mix the rice flour, potato starch, tapioca flour, sugar substitute, dry buttermilk powder, baking powder, salt, baking soda, and xanthan gum together in a bowl. Stir in water, eggs, and oil until well-blended. Heat a well-oiled skillet over medium-high heat and spoon the batter onto it. Cook until bubbles begin to form on the edge of the cakes. Flip and cook until golden brown. Enjoy! For this delicious lunch, you'll need the following ingredients: • 2 bunches fresh spinach (chopped) • 1 head romaine lettuce (chopped) • 1 pint fresh strawberries (sliced) • 1 Bermuda onion (sliced)• ½ cup mayonnaise • 1/3 cup white sugar • ¼ cup milk • 2 tablespoons white wine vinegar • 2 tablespoons poppy seeds Combine the spinach, romaine, strawberries, and onion in a large salad bowl. Combine the mayonnaise, sugar, milk, vinegar, and poppy seeds in a jar with a lid. Shake the mixture well and pour over salad. Toss until the dressing is evenly distributed.
